The following is a recipe for some easy to make tofu nuggets which require very little ingredients. I was very impressed with how these turned out so I thought I’d share the recipe with you guys. I am definitely not a chef (not even close), but I do like experimenting in the kitchen.
I made the breadcrumbs myself, however, you can easily find store-bought ones. This is a no hassle recipe as only 3 ingredients are used. No eggs are required for this recipe, so if you’re out of eggs, then this is the recipe for you! Before I continue rambling on, let’s move on to the recipe.
Vegan BBQ Tofu Nuggets
Serves: 2-3 (Depending on how hungry the crowd is)
250g Firm/ Extra firm Tofu
100ml BBQ sauce
3 slices of bread/ breadcrumbs
1.) If you have store-bought breadcrumbs, skip to the 3rd step. Turn the oven on to 200 degrees Celsius. Bake 3 slices of bread (or any other bread you would like for your coating, I used wholemeal french slice) in the oven for 10 mins. Leave the oven on so that it will be preheated for later.
2.)Cut up the bread in small slices and pulse in a chopper or food processor. A blender could also work well. Pulse until they resemble breadcrumb texture.
2.) Press the tofu with a kitchen towel to remove moisture. Cut the block of tofu into cubes or any other shape you would like your nuggets to be.
3.) Place the BBQ sauce in a plate and the breadcrumbs in another.
4.) First dip the tofu pieces in the BBQ sauce and then roll them in the breadcrumbs. Repeat for each cube.
5.) Place in the oven for 15 mins. Turn them around and leave for another 5 mins.
6.) Serve (maybe with a bit more BBQ sauce on the side) and enjoy!
Note: The more BBQ sauce you add, the better the breadcrumbs stick and the crunchier the nuggets will turn out.
